Perennial vegetables: Plant them once...

Recently, I was struck by an obvious question: why are most of our fruit and nut plants perennials, but most of our vegetables are annuals? We plant fruit and nut trees or soft-berry bushes and can anticipate harvests for years, if not decades to come.
